How It Works: Natural pigment chromophores absorb visible light through ฯโฯ* transitions of extended conjugated systems (anthocyanin flavylium, chlorophyll porphyrin, carotenoid polyene). the same extended conjugation providing colour also provides radical-scavenging antioxidant activity through electron delocalisation that stabilises phenoxyl/carotenyl radical intermediates.
