SCIENTIFIC NOTE
Oleuropein's bitter taste in fresh olives is deliberately reduced during olive processing (curing) via enzymatic hydrolysis to hydroxytyrosol. the debittering of olives literally destroys most of the olive's antioxidant capacity โ table olives have dramatically lower polyphenol content than fresh or uncured olives. olive leaf extract, which preserves intact oleuropein, provides the polyphenol content that traditional mediterranean practitioners accessed through olive leaf decoctions.
